Nutty Slice

Ingredients:

Base

1.5 cups rolled oats 3 tbsp extra virgin olive oil 3 tbsp maple syrup 3 tbsp cacao Caramel 100g dried pitted dates 1 tsp vanilla extract 5 tbsp natural PB 1 tbsp honey 3-4 tbsp boiling water Pinch of salt Chocolate topping 40g milk chocolate baking choc chips 10 almonds crushed (optional)

Method: 1. Preheat oven to 180C. Line a square tin with baking paper and set aside. 2. Pour boiling water over the dates and set aside

3. Blitz the oats in a blender/bullet

4. Prepare base by combining ingredients in a medium bowl. Mix well until all ingredients are combed. Add a tablespoon of water if it's looking too dry/crumbly. 5. Layer the base in the tray and pat down firmly. Bake for 8-10 minutes until browned. Remove from the oven and allow it to rest for 10 minutes

6. Drain the dates. Add all caramel ingredients into the blender.

7. Once the base has cooled slightly, layer on caramel 8. Melt chocolate in a microwave in short 10-30second intervals until melted. Drizzle melted chocolate on top of the caramel. Top with crushed almonds, or anything you like. TBH coconut would be delightful. 9. Place in freezer for 20 minutes to set. Store in freezer.
